How Thai Beverages can Meet Demand for Less Sugar – without Compromising on Sweetness

Thai consumers are increasingly looking to reduce sugar, yet they still expect the familiar sweetness and overall taste experience they know and enjoy. For beverage developers, the challenge is therefore not simply to remove sugar, but to rebuild the complete sensory experience.

Sugar contributes more than sweetness. It also provides body and viscosity, helps balance acidity and can mask bitterness from other ingredients. When high-intensity sweeteners are used at very low levels, these functions may be lost. As a result, reduced-sugar beverages can taste thinner, while acidity, bitterness or ingredient off-notes become more noticeable.

For R&D teams, successful reformulation requires a holistic approach covering five sensory dimensions: sweetness modulation, mouthfeel restoration, off-note masking, sour–sweet rebalancing and aroma rebalancing. Because a change in one sensory attribute can affect the others, these elements need to be developed together rather than optimised independently.

Givaudan’s TasteSolutions® Sweetness approach combines more than 150 natural taste modifiers with AI tools to help identify and optimise combinations for individual beverage applications. The objective is not simply to replace the sweetness removed with sugar reduction, but to recreate a balanced and satisfying taste experience.

Consumer preference is another critical factor. The “right” sweetness level and character can vary across markets and beverage categories. Givaudan’s Thai consumer study explores sweetness, flavour balance, body, mouthfeel and aftertaste across carbonated soft drinks, energy drinks and functional beverages.
