เมื่อผู้บริโภคให้ความสนใจต่อความปลอดภัยและคุณภาพของผลิตภัณฑ์อาหารที่บริโภค จึงส่งผลให้ผู้ผลิตต้องเฝ้าระวัง และมีการตรวจติดตามในแต่ละขั้นตอนของระบบการผลิตอย่างละเอียดถี่ถ้วน ระบบการผลิต (Production system) หมายถึง การผลิตเป็นกระบวนการที่ทำให้เกิดการสร้างสิ่งหนึ่งสิ่งใดขึ้นมาจากการใช้ทรัพยากรหรือปัจจัยการผลิตที่มีอยู่ การดำเนินการผลิตจะเป็นไปตามลำดับขั้นตอนของการกระทำก่อนหลัง กล่าวคือ จากวัตถุดิบที่มีอยู่จะถูกแปลงสภาพให้เป็นผลผลิตที่อยู่ในรูปตามต้องการ เพื่อให้การผลิตบรรลุวัตถุประสงค์ดังกล่าวนั้น จึงจำเป็นต้องมีการจัดการให้อยู่ในรูปของระบบการผลิต
ระบบการผลิต ประกอบด้วยส่วนที่สำคัญ 3 ส่วน คือ ปัจจัยการผลิต (Input) กระบวนการแปลงสภาพ (Conversion process) และผลผลิต (Output) ที่อาจเป็นสินค้าหรือบริการ การผลิตที่มีประสิทธิภาพนั้น จะต้องคำนึงถึงปัจจัยด้านปริมาณ คุณภาพ เวลา และราคา ซึ่งทั้งหมดนี้จะต้องนำมารวมไว้ในระบบการผลิต โดยมีการวางแผนและควบคุมการผลิตเป็นแกนกลาง กิจกรรมต่างๆ ที่อยู่ในระบบการผลิตนั้นสามารถจำแนกได้เป็น 3 ขั้นตอน คือ การวางแผน (Planning) การดําเนินงาน (Operation) และการควบคุม (Control)
Consumers’ concerns about the safety and quality of food products have prompted manufacturers to closely monitor and inspect the whole production system in which something is created using the available resources or inputs. And more often than not, it turns out that there are several complicated steps involved in transforming raw materials into the desired product. A reliable production system is therefore required to achieve such goals.
In general, a production system consists of three major components: inputs; conversion processes; and outputs, which can be goods or services. To become more efficient, many factors must also be considered and integrated, including quantity, quality, time, and prices. Besides that, production planning and control are at the core of the system, with the following three necessary steps: planning, operation, and control.
