“น้ำส้มสายชูหมัก (Cider vinegar)” เป็นหนึ่งในเครื่องดื่มเพื่อสุขภาพที่กำลังได้รับความนิยมสูง เพราะมีสารสำคัญ คือ กรดแอซีติก (Acetic acid) ที่ช่วยเพิ่มประสิทธิภาพในการย่อยอาหารและควบคุมปริมาณน้ำตาลในเลือด ส่งผลให้ตลาดของผลิตภัณฑ์น้ำส้มสายชูหมักมีแนวโน้มเติบโตขึ้นอย่างต่อเนื่อง โดยคาดการณ์ว่าในปี พ.ศ. 2570 ผลิตภัณฑ์น้ำส้มสายชูหมักในตลาดโลกจะมีมูลค่าสูงถึง 16,000 ล้านเหรียญดอลลาร์สหรัฐ อย่างไรก็ตาม ที่ผ่านมาในประเทศไทยยังมีส่วนแบ่งในตลาดนี้น้อย เพราะแม้จะมีผลผลิตทางการเกษตรที่สามารถใช้เป็นวัตถุดิบได้อยู่จำนวนมาก แต่ผู้ประกอบการไทยยังขาดองค์ความรู้และเทคโนโลยีที่เหมาะสม จึงยากแก่การผลิตสินค้าในระดับอุตสาหกรรม ทางทีมวิจัยของไบโอเทคโดยสวทช. จึงได้พัฒนาเทคโนโลยีการผลิตน้ำส้มสายชูหมักแบบขั้นตอนเดียวสำหรับวัตถุดิบทางการเกษตรของไทย โดยเป็นกระบวนการผลิตแบบง่ายและต้นทุนต่ำ เพื่อช่วยส่งเสริมให้ผู้ประกอบการรายย่อย (SMEs) ให้สามารถเข้าถึงเทคโนโลยีการแปรรูปสินค้าทางการเกษตรนี้เพื่อนำมาสร้างมูลค่าเพิ่มได้
“Cider vinegar” is one of the popular health beverages due to its key ingredient, acetic acid, which helps improve digestion and control blood sugar levels. This has resulted in a continuous growth trend in the cider vinegar market, with an estimated value of up to 16 billion US dollars globally by the year 2027. However, the market share for Thai cider vinegar products has been relatively small due to the lack of appropriate knowledge and technology among Thai entrepreneurs. Although Thailand has abundant agricultural resources that can be used as raw materials, cider vinegar production as an industrial product has remained a challenge. Due to this presenting opportunity, the research team at BIOTEC, a member of NSTDA, has developed a single-step technology for producing cider vinegar using Thai agricultural products. This technology is simple, cost-effective, and aims to enable small and medium-sized enterprises (SMEs) to access agricultural processing technologies to create added value.
