Transglutaminase
Transglutaminase เป็นเอนไซม์ที่ได้ จากการหมัก
โดยจุลิ นทรีย์ผ่านการพั ฒนาให้มีความคงทนต่ อ
ออกซิเจนมากขึ้นเพื่อสะดวกต่อการใช้ งาน ช่วย
เรื่องการประสานให้ เกิดโครงสร้างของโปรตีนใน
ชิ้นเนื้อหรือเชื่อมต่อให้ เป็นเนื้อเดียวกันอีกทั้งยังให้
ประโยชน์ในด้านการปรับปรุงเนื้อสัมผัสของอาหาร
เพิ่มความสามารถในการอุ้มน�้ ำการเชื่อมต่อชิ้นเนื้อ
เข้ าด้วยกั น ช่วยเพิ่ม Yield ในกระบวนการผลิต
และยังช่ วยลดการแยกชั้นของน�้ำ (Syneresis)

Transglutaminase,anenzyme frommicrobial
fermentation, has now been developed to
be more stable to oxygen for a better
efficiency when used in a process. This
enzyme is used to bond proteins together
making meat emulsion be homogeneous.
Moreover, itcanalsohelpproductsas texture
improver,waterabsorber,andhomogenizer.
Thesepropertiescanaidand increaseyield
in a process. In yogurt production,
Transglutaminase is also regularly used to
reducesyneresis reaction in theproduct.The
enzymehasabroadapplication towhich the
