risks. Consumers should be able to
trust in Good Manufacturing Practice
(GMP), which is a basic practice all
manufacturers should uphold.
Why GMP is Necessary?
GMP is a decent practice in food manufacturing,

and is a quality assurance system that ensures safety
and strengthen consumers’ confidence. GMP covers
from the location of the manufacturer’s establishment
to building construction, and manufacturing process
that guarantees safety, quality, and standard. Every
step of the manufacturing process; production
planning, production control, raw materials, storage,
quality control, transportation, data recording,
tracking and tracing, and sanitation and hygiene
management, must comply with GMP.
Moreover, GMP is a basic quality assurance
system before upgrading to other systems such as
HACCP (Hazard Analysis Critical Control Point) and
ISO 9000, which are created to ensure the customers
about the products that are being released to the
global market.
What are the risks from the manufacturing
process? Key factors operators must consider
are;
1. Risks in the Manufacturing Process Building
trust among consumers is essential and must be
taken into account by operators. Processes such as
the use of tools and equipment in facilitating staffs
and reducing risks to injuries from accidents, and
hygienic management in the production area are
some key examples.
These days, food hazards are commonly found
from storage management and contacts with food.
Risk must be eliminated once it is found, however,
inhibiting error before it takes place would be
expedient to the products and the consumers in
long-term.
2. Risks in the Post-Manufacturing Process
In the post manufacturing process like packaging
management - the process or method of careful
product wrapping - for safe transportation to the final
consumers, unexpected events could arise in various
environment from accidents or transportation. These
risks are sometimes overlooked as we solely focus
on cost reduction.
Transportation is another crucial factor, whether
it is a land, maritime, or aviation transportation. These
days, land transportation is the main transportation
of Thailand, as it is convenient to transport the
products to the customers after Thailand has
improved and built road infrastructure in response
