n the past, many companies avoided natural colours because they were difficult to
use, being either; problems with stability, oxidation, pH, changing shade, interactions
with acids etc. Achieving the correct shade with natural colors is an important
target for the beverage formulator, but long-term stability and ease of handling is also
significant. Water soluble liquids or powders, water dispersible emulsion, dispersion
powdered colors are two product forms that are used in the beverage formulation.
When using soluble powders, solubility limits must be considered and the need for
“presolubilized” is needed when incorporating them into beverages. At LycoRed we
are continually making new developments for natural colorants, specific yellow to
orange for Beta Carotene and Red colors with natural lycopene. The latest formulation
of easy to use beta carotene in emulsion/liquid formulations enables the producers
of beverages to use straight into their formulations, without the need for extra step in
production of “presolubilizing”. So there is no need to make a dispersion or emulsion
prior to adding to the beverage.
LycoRed’s new formulations of beta carotene are extremely stable to various pH,
changing temperature and acid environment. Our application laboratories are working
in continous cooperation with customers for not only matching specific colorants that
they desire but also creating new applications and solving individual problems that
the customers may face during production.
Being beverage, dairy or any other applications, LycoRed high standard of service
and formulations are recognized in the industry.
The global food colours market was worth approximately USD 1,550 m in 2011
and its volume was estimated to be 45,000-50,000 tonnes, in line with the changing
demand in patterns, value growth are driven by sales of natural and nature-identical
food colours.
Significant investment is being focused on technologies to produce natural food
colours that are more efficient, safer, greener and more stable (especially to heat
and light).
According to Mintel, global food and drink innovation continues to be shaped by
the trend for naturalness. New products launched making no additive/preservative
claims and providing other natural indicators continue to be highly prevalent despite
a lack of definition for natural.
