Umami Analyzer UA-300 is a detector for the
umami taste which is one of the five basic
tastesofhuman.Umami tastecanbe from the
glutamic acid or the free glutamate which
occursnaturallyorcomes from theMSG (Mono
Sodium Glutamate). The measurement
technique is based on electro-chemical
analysis with application of the enzyme
Glutamatedehydrogenase. After reactingwith
enzyme, freeglutamatewill beoxidizedby the
screen printed electrode. The result will be
shown as% glutamate on the 7 inch graphic
touchpanel screen. It canbeapplied to food
products or foodadditives like soy sauceetc.
After preparingsample for 10-15minutes, the
analysis timeby themachine is2minutesper
sample. The machine is high precision with
cost per test 10 times lower thanHPLC.
