B
ecause of this, King Mongkut’s University of Technology Thonburi has
developed the innovative machine

to wash fruits and vegetables with
ozone and thus conservewater. This innovation is beneficial not only for
health and theenvironment, but it also helps preserve valuable vitamins.
The specific characteristics of certain fruits and vegetables will cause them
to be bruised easily when washing with water. If carved fruits used to decorate
plates are not washed, theymay contain bacteria which canmix with the food;
however, the meat of some fruits such as oranges or watermelon cannot be
washeddirectlywithwater.Thus the ideawasconceivedofa “Machine forwashing
fruitsand vegetableseconomicallywithozone”

. Thisdevicehasbeendesigned
to innovatively incorporate theconceptof the “3Rs”—Reduce,ReuseandRecycle.
It was designed to use small quantities of ozone as a gas and also of ozonized
water towashvegetablesand fruits (Reduce).Usingozonegascanalsoeliminate
water use completely (Zerowater). And since the ozonizedwater itself remains
clean, it canbeused for 2-3washingcycles (Reuse). Themachine

killing germs aswell as eliminatingodors and chemicals.

workswithanautomatedprogram that isdesigned for4groups
of fruits and vegetables. Group 1 includes vegetables containing high levels of
pesticidecontaminationsuchasChinesebroccoli, cabbage, and longbeans, and
these require20minutesofwashing. Group2 is freshvegetableswhichareeaten
uncookedsuchas lettuce,cilantro,andgreenonionsand thatmaybecontaminated
withbacteria; thesearewashed for5minutes. Group3 isvegetableswhicheasily
losevitaminswhenwashedwithwater likespinach, tomatoes,andoranges; these
arewashed for fiveminutes. AndGroup4 is various kinds ofmushroomswhich
are difficult towash, andwashingmushrooms withwater leads to spoilage; but
the machine

provides the alternative of spraying them with ozone gas for 5
minutes. The resultsof thevariousprogramshavebeenscientifically testedand
havebeen shown tobe safeand to retain thenutritional valueof theproduce.
In the future, themachine

is likely to develop into a commercial option for
the fruit and vegetable industry.
